Today I made the soba noodle salad from Blue Apron.
The ingredients were packaged nicely and the instructions were clearly written. I put a pot on to boil and started prep.
I recommend having several prep bowls available as the steps have several prep and set aside steps. The corn, ginger, and onion mix was easy to cook and the soba noodles were a snap. Once all prep was complete, a large steel bowl made assembly easy.
I do suggest letting to soba noodles dry for longer than the instructions. The entire process took 30 minutes and the three bowls of salad looked great. Yes, you heard right. Three salads are possible from this recipe.
The only room for improvement would be to have the ginger grated as the finely chopped ginger was a bit too "purfumey" for Tanja. All other comments were positive and the fresh taste was the key flavor takeaway.
I give this recipe a 3.5 out of 5 as only one of the plates was cleaned.
On to the next Blue Apron meal. Tomorrow is chicken wings.
